Sortir du frigo la viande au moins 2 heures avant la cuisson!</p>
<p>Inciser 1 à 2 cm un quadrillage en losange le côté gras afin que la viande cuise uniformément.</p>
<p>Assaisonner la viande de fleur de sel.<br />
Préchauffer le four à 160 °C.<br />
Poser la viande sur une plaque à rôtir ou dans une grande poêle et la colorer à feu vif de toutes parts.<br />
Dès que la viande a pris une belle couleur dorée, l’assaisonner de piment d’Espelette.<br />
L’enfourner ensuite sur un grille avec une plaque en dessous (pour récupérer la graisse) pendant 45 min (env. 35min pour le filet, se fier à la température à cœur) avec chaleur tournante en l’arrosant régulièrement de gras de cuisson.</p>
<p>Pendant ce temps, porter à ébullition dans une petite casserole la sauce soja, le vinaigre et le miel.<br />
Dès la sortie du four, laisser la viande reposer et le laquer uniformément avec le mélange de vinaigre.<br />
Renouveler le laquage plusieurs fois. Servir le carré coupé en tranches de 1 cm d’épaisseur.</p>
